I have WL running as a service on NT and was wondering would it be possible to view its output over the network.

Depends on what you mean by "output", but you should be able to view the log via the console, which should be available over the web at http://your_domain_or_ip_address:7001/console (by default).
I think you need to right-click on the server name and then you can select "View Logs" or something....
